Vanilla

A spice extracted from the fermented pods of the vanilla orchid and widely used in spirits production to add sweetness and complexity. It is often used in the production of liqueurs, flavoured vodka and whisky to create a smooth, sweet taste.

Vatted malt

Also known as blended malt, this refers to a whisky that is composed of malt whiskies from different distilleries. Unlike blended whisky, however, vatted malt does not contain any grain whiskies. An example of this is Johnnie Walker Green Label.

Vendange

The French word for "vintage" or "grape harvest" describes the process of harvesting grapes, which typically takes place from late summer to autumn. This is a crucial time for winegrowers, as the condition of the grapes has a direct impact on the quality of the wine.

Vermouth

Wine flavored with herbs and spices. Vermouth comes in different varieties, including dry and sweet, and is often used as an aperitif or in cocktails such as the Martini.

Vigneron

French for "winemaker", refers to a person who grows grapes and makes wine. The vigneron is often responsible for the entire process from growing to winemaking, unlike larger wineries where these tasks may be split.

Vin Doux Naturel

A French sweet wine made by adding alcohol to the must (grape juice) before fermentation is complete to stop fermentation and preserve a higher residual sugar content. Well-known examples are Muscat de Beaumes-de-Venise and Rivesaltes.

Vinaigrette

Although mainly known as a sauce for salads, this term can also be a French term for a simple, homemade liqueur made by soaking fruit or herbs in alcohol, similar to a cordial.

Vodka

A clear, highly distilled alcohol that originally comes from Russia and Poland. Vodka is made from fermented substances such as grain, potatoes or sometimes sugar cane and is characterised by its neutral taste and high purity.

VS (Very Special, 3 stars)

A quality standard for Cognac, indicating that the youngest spirit in the blend has been matured in a cask for at least 2.5 years. This category is often referred to as "3 stars" and is typically the entry point for many Cognac brands, characterised by fresher and fruitier flavours.

VSOP (Very Special Old Pale, "VO", 5 stars)

Another, higher quality standard for Cognac and sometimes other brandies such as Armagnac, which states that the youngest spirit in the blend has been matured in a cask for at least 4.5 years. VSOP Cognacs are known for their finer and more complex flavours and are sometimes referred to as "VO" or "5 stars".
